I'm running this on Unraid and I installed using the community app

IMO either the docker image is silently corrupted locally on your server or the image is broken upstream (unraid / imagegenius). I suggest to remove the docker image completely. Then additionally purge remaining layers with docker system prune -a. Then re-pull again and see if it makes difference. Quick internet search for unraid immich "geodata-date.txt" reveals a couple of similar cases recently, no resolution though. Btw https://immich.app/docs/install/unraid/
The Unraid template uses a community made image and is not officially supported by Immich

I tried to switch from immich:cuda to the immich:latest release -- it pulled a bunch of new data and installed, but I'm getting the same error messages as before. I'll take a look at the docs and maybe I need to install immich the "supported" way. Luckily this isn't production or anything, so I can pivot, even though the image collection is quite large

I can confirm that the immich image from imagegenius (used in the community app if I'm not mistaken) does not have geodata directory
