Offline transactions testing

I'm playing with the offline-transactions package and persistQueryClient. I'm very delighted with how things are running, Bravo! Or at least in dev mode with network connectivity.
How can I properly simulate an offline connection? I tried "offline" from Firefox dev tools, request blocking, and shutting down my server. Every time, the mutation does nothing—nothing is persisted or displayed, as if the button was deactivated. Any thoughts?
