Is running multiple instances on Docker available?

Hi,
I’m using Docker Desktop on Windows and currently have one Immich instance running.
I would like to set up a second Immich instance on the same machine for testing, with:
A separate database
Separate ports
Completely isolated containers and volumes
Before proceeding, I’d like to know:
Is running multiple Immich instances on the same Docker host officially supported?
If yes, is there any documentation or recommended setup for this?
Are there any known limitations or things to be careful about on Docker Desktop (Windows)?
Any guidance would be greatly appreciated.
