Will the Galatea Hotswap pcb have any clearance issues with the OG r2 f1 8x?
not sure if the multi layout support of the hotswap sockets will cause any fitment or clearance issues (sides and bottom)

If you are asking about the compatibility of F1-8x products and Galatea Hot swap products, you can use them without any problems.
I'm not sure if the Galatea hotswap PCB will be released from Geonworks at this point.

I would recommend removing the JST connector.

it would be difficult to heat up the pads to remove the jst connect because the two legs are underneath the connector, no?
