Running GTAV on my M1 Pro Macbook failed
and I don't know what to do...

In your last line of log there is this message 'wine: failed to open "/Users/kimiseo/Games/Heroic/Prefixes/default/Grand": c0000135' it means that Wine didn't find any executable files to run and start your game.
Game Porting Toolkit prefixes can currently not contain spaces. Changing the prefix path to be
/Users/kimiseo/Games/Heroic/Prefixes/default/GrandTheftAutoV (for example) should work
