Can I exclude albums from showing up in the Photos tab?
As an example, I want to backup my WhatsApp images, however there are a lot of junk images that I don't need in my library, and it would be easier to just select the ones that I like and move them to a seperate album that shows up in the library. Is that possible?

Yes, you can double tap to exclude an album
That doesn't really address my issue since that wouldn't upload the images to Immich. I want them to be backed up there but only a subset (which I could move into a new album for example) should be in the library, face indexed, etc.
Then you can create a different album from your native photo viewer, put the files you want to upload from WhatsApp in it and include that album in Immich to upload
