Nodejs download server is just unstable. If you set your nodejs version to the latest version of a major, i.e 1717 and are using Build Image v2, it should use the preinstalled one rather then trying to download it

Yea, you can just set 1818 in environment variable NODE_VERSIONNODE_VERSION, or use the .nvmrc.nvmrc .node-version.node-version files, iirc the files have priorty. Any of the latest versions are supported with Pages: https://developers.cloudflare.com/pages/platform/language-support-and-tools/
