how do you know the anticheat is not installed? if you see an error about missing files check this guide (it's for linux, but you can do kinda the same things on windows https://github.com/Heroic-Games-Launcher/HeroicGamesLauncher/wiki/Fall-Guys, just go to that folder and install the .exe instead of using the run exe in prefix option)

In case anyone on windows needs help, double clicking to run EpicOnlineServicesInstaller.exe in the Epic Online Services folder that is inside of the FallGuys folder should fix the "missing files issue" (This is what Step 5, under that link [https://github.com/Heroic-Games-Launcher/HeroicGamesLauncher/wiki/Fall-Guys] means)

Did you actually get it to run properly? Hmmm
I want to use Heroic to launch all my epic games so I don't have to have the platform installed, just the services runtimes and condense all my launchers into as few as possible.
Feels like on-line mp / drm might be a long problem though

Yeah, I haven't played in a couple days, but following all those steps let me play Fall guys with no issues (I just pinned that anti cheat installer to start so I can quickly update it whenever it comes up)
Same for my other epic games btw
I do know that I had trouble when "Epic Online Services" or my epic games had been downloaded through the Epic Games Launcher, cause switching to Heroic caused issues, and I don't remember the whole solution

Ah maybe that's it. I've never installed epic's launcher on this machine. I'll try that as a potential fix.

No, what I meant was, I had trouble because I had already installed epic games launcher, it should be easier to setup heroic if you've never installed epic games launcher
You shouldn't ever have to install epic games launcher in order for heroic to work
