Create email account for domain
Does someone know if emails that go to an email adress like name@domain.com go to the nameserver or something and would it be possible to make your own nameservers to make email accounts for your domain?

You'd have to run your own mail servers. Self hosting email isn't recommended because you'll be fighting spam lists for your servers IPs
And emails do go via nameservers?
No. Emails go via mail servers
You use MX records to tell other email servers where to send emails for your domain

And with a mail server you could make an account you can log into?
It is easier to just create a new email and use the forward function. Maybe you have interest in sending emails with that custom domain?

Yes. But as I mentioned, sending emails from your own server can cause issues with spam and blacklists
