How to enable multiple blacklists/whitelist channels at once?
The bot says channels but I can't set multiple of them.

You should be able to add multiple channels into the same commmand. So for example
/config set Leveling Channels #bot-commands, #counting8 Replies

i used
/config set Leveling Channels #bot-commands and /config set Leveling Channels #counting because i wanted to blacklist both of them, and here's config check and config troubleshoot messages
Solution
You should be able to add multiple channels into the same commmand. So for example
/config set Leveling Channels #bot-commands, #countingOOH
Otherwise I would suggest using the dashboard for configuring it's a lot more up to date
