Manta M8p 2.0 configuration only allows to set one 4 pin fan header
In both 4 pin fan headers are used in the configuration for part cooling fans, it sets both the fans with same pins, causing an error unless overwritten in printer.cfg manually.
Expected behavior would be the configurator setting pins for the second fan to be that of the second 4 pin header.

You need to use digital PWM on 2-pin header (even though it is a 4-pin), I forget the reason for it, but it was mentioned a while back.
The settings as I described it works if set for one fan, but not if set for both.
