if he limited himself to working in just one state, or country (as many somms do, with a traditional job working at a restaurant) his options would be very limited.
but when he went out on his own to start his business, he zoomed out to include:
• somms who aren't at his level of training or experience yet
• businesses who can't afford to hire a full time somm, but have business challenges that he can help them with
• organizations (and in those orgs people) who want to educate their employees, clients, etc about wine.
• wineries, distributors, importers who need help understanding new territories
• ...and more.
if he only sold to Somms, he could still have a modest business. but him being a somm is just an entry point, and he's built a much larger business (multiple businesses in fact) over time.
