Not related to timezones but:

Would'nt the sun light up every part of flat earth and would we not be able to see the sun shining from any point on the earth? I don't really understand how there can be night time lets say in Europe but day in America if the sun is floating over the flat surface. Im also curious how do sunsets work too

Let's start with sunsets. The sun "sets" as it goes away from the observer. See light attenuation. For the other part about why all parts of earth are not lit, see light attenuation.
