New to Immich Questions

I am new to Immich and new to Linux as a whole. I have a proxmox server and a separate NAS that has SMB file shares. I ultimately want the Immich server installed on a Ubuntu VM on proxmox, with the database for Immich stored within the OS drive of the Immich server, however I want the photos/videos to be stored on the NAS.

1. If the server were to die and I lost everything on the server side can I re-build a new server ( obviously with a blank database) and point it to the existing photo/video location and it will rebuild the database with the face detection and search ability. I know it will take time to re-process, but this is a worst case senario. I trust the NAS a lot more than ProxMox in not losing anything. Also everything is backed up on the NAS, making data loss a lot harder.
2. The directory where the photos are stored I noticed that it does not simply dump the images and videos as files, instead each one is nested in multiple folders, assuming it is some sort of database thing, is there a way to change it so all the photos and videos are just stored as simple files within the directory for easy access.
