Updating a really old world

If I've got a really old vanilla world (like 1.7) and I want to play it in vanilla 1.21.1, is it safe to just open the world up in 1.21.1 or should I follow an incremental update path? (that is, open the world in newer and newer versions until I get to 1.21.1)

If I should do it incrementally, what versions should I use?

I believe you're better off not doing incremental updates, as later versions might have conversion fixes for older versions
