As for getting Summer Coins quickly. Do as much points as you can, you get
1 Summer Coin per 1k points in Normal harvest
2 Summer Coins per 1k points in Mega harvest

Tomatoes are still meta for the ease of getting them
And get the summer seed packs, that travel fruit whatever its called and the oasis egg

Plant lot of tomatoes, they give a lot of points and grow quickly, and also use sugar apples
