Even done "right", there's a random element. I've done the full sprinkler spread maybe 4 times (with Sweet Soaker), followed all the rules, and only once got a massive Moon Melon like you see pics of on the wiki. Other times, I definitely got large ones, and they were worth single-digit billions with the right mutations, but these $100B+ melons are still rare. RNG is a huge factor in this game.
