It's not that hard to get a crop worth tens of billions but it's usually not worth it without a raccoon to copy it over and over

Almost all of my $5B+ crops have been Moon Blossoms or Moon Melons (maybe one Sunflower hit that range). I've heard a $1T Moon Melon is possible, but when you hear people talking these numbers, it's almost always Candy Blossoms.
I did have a single Lilac harvest that topped $600B, but that was 47 plants, 250+ Lilacs, most were Shocked + Celestial, and many were Gold (dragonfly).
