group tables and organize them better in folders
I have so many tables created in supabase. is there a better way to organize them or structure them properly

No and there is nothing wrong with many tables in a relational database.
Supabase gives you the tools, documentation, and community that makes managing databases, authentication, and backend infrastructure a lot less overwhelming.
