Auth access problems after migration to Shopify’s new Developer Platform

I hope you can help/guide me with the following.
Yesterday I migrated my app to Shopify's new developer platform.
In short: my app offers to add personalised product to a merchant's catalog. Before I was able to add a product to the store. After the migration I ran into access issues such as "Access denied for productCreate field. Required access: write_products access scope. Also: The user must have a permission to create products."
Current set up:
• manage theme app extension via Shopify CLI
• manage the rest via Gadget's backend interface (access, data, api, web)
• use a test store for my dev environment
The case:
• I have changed scopes to do a re auth
• after the change of scopes and re auth in my Shopify test store, I was able to add a product to the catalog
• after working in Shopify CLI and a deploy, I ran into the access issue again
I have also set up the dev app in a different test store as a fresh new install. Here all is working as expected and I do not run into access issues.
I want to deploy my set up to my production app as well. However I am afraid that for existing app installs I might run into the access denied issue as well.
Current installed apps cannot be reinstalled and installed again, as that would set all their added products to out of stock.
Could you please support/guide me to get it solved for my dev app and test set up so I can after deploy it for production as well?
