I like complementary + euphoria patches, it has amazing mod support for custom blocks and whatnot

I think you are talking either about the cloud shadows or about Moire pattern from Aliasing
You will need to apply better AA or buy a higher resolution monitor
You can look for AA settings in post processing in shader settings
You can also add another AA layer separate from shader AA, here is a list of possible AA methods to add to MC: https://discord.com/channels/881614130614767666/1385832852989677660/1420841187912454145
