Show only the first option and display '+N more' for the remaining options in the select
I tried publishing the form views to customize this behavior, but it didn’t work.
Has anyone here tried customizing it before? Please share your solution if you have one!

I will suggest you to create a new component and style them according to your needs.
Remove the form views and at most only publish that view, we highly advise against publishing any views. You can also likely just extend the current component and have it do as you want with you customising it.
