How to beta test a shopify app?
I have an app in development that I am ready to install on my real life ecommerce store as a beta test. Do I have to go all the way through publishing and getting shopify approval for my app now, or can I install it in another merchants store via some other mechanism?

You can make a new development environment that you don't change, make a connection to a new Shopify app and select the custom distribution rather than the public distribution. Then install the app on the store.
Note that this doesn't mean that the data would be available in production. If you want to migrate the customer data once you go live, you'll need to build out a migration between environments (there's nothing built in Gadget for that).
There's no real other way to do this

oh wait - what do I need to do to get the admin extensions to show up?
I think that if you deploy to that beta app, you should be able to see the extension
When I say deploy, I mean with the Shopify CLI
