why is it that every time I want to play minecraft, I have to download the latest version and after restarting the downloaded version is not saved?

thats only the latest version supported by our launcher’s version changer
microsoft is auto updating mcbe to latest and removing the one you downloaded
there are ways to prevent auto updates but it can be a bit inconsistent
for now you can just use beta on latest, although its a bit more unstable and some features don’t work
