Multiple KVs or one?

Curious on others' experience. I built up a project using multiple KVs. Now I'm starting to wonder if I should have used one KV for the entire system.
My thoughts on this at first were to keep data isolated and know what is where easier, and for damage control. Now I'm starting to wonder if it would be better to have it all in one as I could lower my number of reads by gathering all the data that might be needed in one go, rather than selectively making multiple transactions based on specific conditions (ex. if you use one endpoint that doesn't need data for another, or if there's an error and well never get to using said data, don't get it).
