Completely reset and read metadata from scratch?

I'd like to find a way to permanently delete all metadata gathered by Immich and then make Immich scan through all assets again to get a fresh start on the metadata, in order to assist in troubleshooting why date based sorting isn't seemingly working for me.
I'm troubleshooting an issue where the sorting of photos based on date isn't adding up between Digikam and Immich.
I have modified the exif metadata in Digikam and am running the "Extract metadata" job in Immich, in the hopes that the changes made in Digikam will be similarly reflected in Immich, but there's something that makes Immich trip up on this, and I'm having issues figuring out what.
As part of my troubleshooting I'd like to know how to fully reset all metadata in Immich and make Immich re-read everything from scratch. I'd like to avoid removing all assets all together and re-import them, as there's about 170 000 items to work through.
