newbie questions

so basically im trying to create 3 versions of secureblue OS for personal use basically with the intent of being able to be able to store them whole locally on flashdrives and install without need of the internet with one version being for servers one version being for my own personal used and one version being for my loved ones use thats basically just swapping out GUI applications with TUI ones adding riced .dotfiles by default etc however i have.... zero idea how id do this and was wondering if someone can help me figure out how to get started
