sensesp configuration parameters

Thinking of building a smart fridge controller.
Where I want to mount it makes a display and input controls difficult.
I built the sensesp template and installed on a esp32 and it looks promising.
Will need a many settable parameters mostly floats. Most have nothing to do with calibration.
Can this be done?
Looks like sensesp uses freertos so will need to use that for tasks.
