Cobblemon RPG Server Questions

FabricHybridForgeHey guys! I'm a developer with a lot of experience in paper servers and recently I take it a commission for doing a RPG Cobblemon server that needs:
- Ranking System
- Quest system (Main & Side Quests)
- Boss Fight / Cutscene Systems
- Crafting System
- Tournament Events
- PvP / NPC Battles
- Economy:
-- Fishing
-- Mining
-- Woodcutting & Gathering
I'm doing some research for the server infra, but I never worked with modpacks. I saw something about Archlight for using mod + plugins, or Sponge with Neoforge and other things. I have 3 months to finish this, for you guys that have more experience, what are your recommendations for doing something like this? Using which infra or tips for doing this kind of server?
