docker user without delete permission - updates not working

It is not yet fixed, and now I fear everytime I move a file or do whatever that it bugs immich somehow and delete my photos.
So I setup an "immich" user for my docker containers as in the FAQ (https://docs.immich.app/FAQ/#how-can-i-run-immich-as-a-non-root-user). This user has all read and write rights except to delete files and folders (possible thanks to Synology DSM)
It works, but now I can't modify any metadata as it uses temporary XMP files, they get renamed at some point and this acts like a create/delete in the system.
What can I do ? Am I the only one who'd like to lock immich a bit to avoid losing data ?
