Understand. So what I would recommend is checking your mail provider's "setup guide". Or look at your old DNS records at your previous place (likely your webhost).

Confirm you have them exactly the same on Cloudflare. For things like "mail" just make sure in Cloudflare they are NOT marked to "Proxied" in the Proxy status column in the Cloudflare Dashboard those should reflect "DNS Only"

That should fix most of your issues, I would hope.
