Pi cam v3 is discouraged by the Crowsnest author, it's problematic to work with apparently. It requires libcamera which doesn't work with ustreamer. You can't even use it unless you run bullseye (requires RatOS v2.x which is in alpha, ie. not released yet) and even then you'll need to modify the boot configuration to reenable libcamera and use something other than Crowsnest for webcam support.

Possibly yes, if you run some kind of webcam streaming service on the zero 2, you could use that in mainsail.

RatOS 1 is built on Pi OS Buster (PiCam3 is not supported).
RatOS 2 is built on Pi OS Bullseye.
With Bullseye you can use Libcamera and the Pi Cam Module 3.
Alternatively, if you had a spare Pi running Bullseye you can stream using a Pi VLC server and watch on any device with VLC Player installed (desktop, iphone, ipad etc).
To broadcast from the Pi type the following into Terminal:
libcamera-vid -t 0 --width 1920 --height 1080 --codec h264 --inline --listen -o tcp://0.0.0.0:8888
On the VLC Player open this stream:
tcp/h264://192.168.xx.xx:8888/
(substitute x's with your Pi's IP address)
