I wonder if this is one of those cases that should ask you to allow access to the epic account in the browser
try installing ie8 in the prefix using winetricks
and see if it pops up an ie8 window when that loading screen gets stuck

one comment, I was able to play this game out of the box with wine-ge-proton7-34, dxvk/vkd3d stuff, no need to do anything special, I just don't remember if it asks for the epic auth which sometimes it does that for me that it's stuck in an initial loading screen with the browser not showing up
