Bed mesh Z height issue (V Core 3 & BL Touch)

Hi everyone. I have just upgraded from V Core 3 to 3.1 My printer was running OK in this following regard prior to the upgrade but have a confusing issue now. I decided to start at the beginning and tune everything again. Sorted out the Z offset for the BL touch fine and moved on to a pressure advance calibration. Once I loaded the print, the printer did its normal 3 point bed level and then z home on the middle of the bed. all good, with z hop between probes possibly in the order of 10mm or so. Then the mesh levelling starts and the Z hop after each probe would seem to hardly be 1mm. It probed the mesh for the first full length (front of bed left-right) but as soon as it probed the first of the second row, the BL Touch probe did not have the ability to deploy and the print job was cancelled. I have looked about the forum, and there has been mention of a z hop probe height, but cannot - or don't understand where and how to adjust - and even if this is in fact the problem as I was still using the RatOS profile and SuperSlicer profile that I was using prior to the upgrade. The only real difference I see is that the BL Touch may be a little lower than it might have been on the 3.0 setup? Thanks in advance. You have all been so helpful and supportive with my questions
