Ways to Reset the end after the dragon is dead

i am trying to do some fun stuff in the end for the fam. Has anyone used any plugins or admin work-a-rounds to automate resetting the ender dragon fight? i have a decent group of people and i want each of them to experience it like it was their first time there, each time they go, you know drop another egg, all that jazz. the server is a work in progress, (like all of us
), it's running the 'latest' spigot server.
