Saddle looking bed mesh

Just upgraded my 3.0 to 3.1 and decided to use a precision square this time.

Bed has been heat soaking at 65 degrees for 30+ minutes

I looked at the video and tried to loosen and re-tighten the x gantry rail as he suggest multiple times, but with no improvement.

Can someone please suggest the order of steps I should take to fix this
