Looking at that chair, with the castors and the front cutout, maybe the simplest solution would be to create a low platform attached to the front of the pedal assembly. That could then be set at the perfect height and leg distance from the pedals, then you just sit in the chair and "roll" up the assembly, so that the stick comes up through the cutout ?
Here's a pic of a setup I had a few years ago for helicopters. It was a G940 FF joystick and collective as a single framework that was all fixed together with the pedals, which I then pushed my chair up to when I'd "climbed aboard".
It also saved any gymnastics getting my leg over the stick too....
You could construct it without any of the framework coming back past the joystick so that it didn't interfere with the chair legs. I had to do it with that setup because of the collective.
I've edited the pic to highlight just the config you would need with your pedals and the Rhino.
