What should I search online to achieve this standup collar look? Is there a particular name for the type of shirt and/or collar? Or is it a plain dress shirt with clips/pins keeping them up?

That one’s pretty stylized. Yeossal has some somewhat more similar — probably quite a few other Asian makers as well.
Spier and Mackay has them a bit less stylized and ready to wear. I’ve got a few and enjoy them, but they take a bit of ironing to keep the roll
