Need some help tracking down a performance issue.

I have been having some issues with random stutters and hitches when launching apps.

I haven't really done much customization to my system so it's basically a vanilla Bazzite 40
My OS is installed on an M.2 1TB SSD.
I have all of the overclocking stuff in my BIOS turned off.
I am using dual 4k monitors (16:9)

Is there something I am overlooking that I should be doing to fix performance? maybe there is a bios setting I am neglecting?
Other than top and dmesg, is there something else I could look at that might tell me what is causing this?

Just to add, in-game performance is fine, what I am experiencing is issues doing normal desktop stuff.

there doesn't appear to be a syslog

Looks like my issue was some bios setting. Not sure which but I reset bios to defaults and I dont have the issue anymore.
