flatpak run org.gnome.meld this can be annoying so you can alias it in your termianl to just meld by doing alias meld='flatpak run org.gnome.meld'
WIf you want this to work outside shell, gotta create a 2 line shell script

WBefore you do the test, just make sure that you can reliably get into grub
