Heat conduction, if you have nouser's mod you can use a especific pixel that is really good in exchanging heat

Maybe that's why, or maybe it's because it's a closed system where water is reused, the only thing really keeping it cooler or making the water become liquid again is a bubble vent that takes away some of the heat
