If i run a game of Windows in Linux with the launcher... is isolated from the system?

still not clear, what are you trying to avoid? some things run inside a wine prefix, but some prefixes may have symlinks to some folders in $HOME
like... dependencies installed in a wine prefix are isolated as in they are gone if you delete the prefix, but if the Documents inside the prefix links to $HOME/Documents that would leak out of the prefix

you can use Heroic Flatpak if you want to be extra safe, flatpak allows you to control how much access games can have to the system
