Text Editor bugs tf out when trying to open a .txt file

I'm trying to create and edit a .cfg file but text editor bugs out, with weird visuals.

What I'm trying to do:
  1. Use console to create a .txt file touch test.txt
  2. Right click file, select "open with text editor"
  3. Edit text in text editor, save as .cfg
  4. Done
What Happens:

  2. Right click file, select "open with text editor"
  3. Text Editor bugs out, showing delayed and glitched visuals.
  4. Does not respond, must be force stopped via terminal/mission center

What I've tried:
  • updating with sudo ujust update
  • Rebooting computer
