Is there a possibility to set the z offset for the pei plate to -0.01 so I can easily change the offset if I need to ?

you mean having different z offsets for different build paltes? you can use a gcode command to do that, SET_GCODE_OFFSET Z_ADJUST=-0.01 before the print starts you can also make a macro button that does that for you
