Three things:
1. Mc font is not monospaced, some chars like spaces take less space
2. Mc removes trailing spaces at the beginning and end
3. Tablist is centered, whatever you do will center
Take those in consideration, ascii arts are not that common in tablist because of that
oh okay, thank you, are there any minecraft focused ascii art generators or should i just do something else?
I don't think there are generators for this, closest thing you'll find is on resourcepack-based servers where they create an image to use as a banner

yeah i saw that but im running a server for Bedrock and Java so this isnt an option :/

There are rp converters java->bedrock afaik, but can't vouch for any sadly, I only support java
They can't see the tablist tho
so bedrock players cant see the tablist even on PC or consoles?

Is there any other way to add a name to the tablist than with items adder?
There's Nexo as well as a plugin alternative
But if you're only going to use it for the tablist, then you might as well do the resourcepack yourself
My main problem is that ItemsAdder is so expensive :'-)

That video is for GUIs, but is the same principle for banners
in 20:30 the guy shows the directory structure your resourcepack needs
21:30 shows where's the text file you need to edit for your resourcepack to detect your images as fonts
