My quality preset keeps reverting to custom from high, anyone know a fix?

Its a known bug and you can just ignore it. It only changes what preset is displayed in the settings, but it doesn't change the actual settings.

Could this be an issue just using patrix and DH together?
thats either from the texturepack or how dh gets the color
DH gets the color from the top texture
If the top texture is lighter then the sides or the pack has multiple variants of the top texture that require Continuity mod and are darker
Then DH will be brigher then vanilla
Try disabling the resource pack and leave then reenter the world
And you will know
