You look fine overall and I am not really one for prescriptive fashion advice, but in an effort to give you what you're asking for.... If there's one thing in particular that feels inconsistent for me here it's probably the pant and shoe pairing. The width of the shoe almost looks wider than the calf of the pant, which looks disproportionate to my eyes.
I would either like to see a wider leg pant with these shoes or a slimmer profile shoe
The pants also have a bit of sheen to them that reads as slightly dressier than a trainer pairing but not a huge deal
I could also do with a slightly longer shirt here as this seems maybe a bit cropped in an "untuckit" style shirt sort of way
What do you feel about the fit? Are there things you like or dislike about it or any examples of similar fits you enjoy?

just really trying to go for some inoffensive smart casual outfit for going out for coffee with friends or maybe dinner (not formal ofc) w the gf, not trying to make some crazy statement so trying to keep it minimal but put together
Totally get it, I feel like you're pretty much there
I would say proportions are the first thing I would pay attention to when you're looking at inspiration photos of things you like and see how they compare to your fit. Especially look at how each item relates to one another
Then maybe look more closely for subtly interesting materials and tones - will still keep it inoffensive and simple but can add a bit more interest
