Colors are desaturated and brighter without shaders
For some reason, the color is normal in a screenshot. I can confirm it is not caused by any resource packs.

Most noticeable part is the sky being a light cyan instead of blue and bright colours being turned almost pale
Colour also is normal when im in menus such as esc or the shader menu

You should send your
latest.log file to provide additional useful information.
Logs are usually located in the .minecraft/logs directory.
On Windows: %appdata%\.minecraft\logs
On Linux: ~/.minecraft/logs
On Mac: ~/Library/Application Support/minecraft/logs
