Offline mode not available in the settings
Apparently, according to PR 3385 from 2024 that's since been merged, the option to run the game in offline mode should exist regardless of the metadata available. The option doesn't exist for me though. I've tried games both from GOG and games that I've installed by running an installer. I'm running the Flatpak version of Heroic (version 2.18.1).

the option only shows up for epic games, gog games do not support that flag
technically the flag doesn't stop games to connect to the internet, it only skips epic's DRM authentication process, as if you were offline (I guess we should clarify that better), so it's only applicable to epic games
