Bed Thermistor is kinda moody

See picture - I've seen this before but never so clearly. The printer has not been moving for 14 days. You can clearly see dips in reported Bed temperature when compared to Chamber thermistor, that is on the rear frame profile. Any ideas what causes these dips?
